Food Experiment


Hello Everyone!

Welcome to my 1st food experiment post, the 1st of many more to come. And I do not call it an "experiment" in the sense that I am mixing ingredients to create a new recipe. Instead I will be trying recipes I find through online sources, local fare favorites, and ones received from family and friends. I will be trying a recipe for the first time and testing its success with my husband, family and friends. 

To be honest, I have always enjoyed food but never spent much time in the kitchen, creating on my own. I do enjoy going out with my husband to the newest restaurant in town, our favorite place in town but trying a new recipe, and/ or trying one of my family/ friends specialties. At the start of my marriage I decided to spend more time in the kitchen, learning new things. My husband is often impressed by what I can throw together with just a few random finds in the fridge. But I wanted to cook some great dishes which I could use for years to come or throw away the recipe all together.

Anyway, I'd like to call this food experiment: scrambled egg muffins. OK, that name is really not too original, as I have seen this recipe called that before, ha. I have seen this recipe shared on social media like Facebook and Pinterest. I finally gave it a try and I feel like it was a great success. The recipe was simple and I was able to refrigerate/ freeze the leftovers for meals to come. This recipe is great for those who prep there food for the week over the weekend. Also students and young couples who are keeping to a budget, and families as this recipe would be easy enough to let young children lend a hand in the kitchen.

Let's take a look...


Ingredients:
12 Eggs
(Made about 24 egg muffins)
1 lb Ground Pork Sausage 
(You could use Ground Turkey if preferred)
1 Red Bell Pepper, chopped
1 cup  Shredded Cheese
(I added more for even cheesier bites)
Salt & Pepper to taste
Paprika
(I spiced mine up a bit)

You can also add onion, as most recipes called for it but I decided to do without as I didn't want onion breathe that early in the morning. Really anything you prefer can be added to this recipe, that is what I liked best about it. For example, bacon instead of/ or in addition to the ground pork sausage. Switching the veggies out for whatever you might have in the kitchen is easy to do as well. You can also use fewer eggs for a smaller batch but I liked that I could freeze the leftovers for another day.



Begin by preheating the oven to 350 and greasing the muffin tin. In a large frying pan, you cook up the ground pork. After ground pork is cooked, drain liquid from pan and place ground pork into large mixing bowl where the 12 eggs have previously been whisk together. In the same bowl you add the remaining ingredients: chopped bell pepper, shredded cheese, salt, pepper, and paprika. Mix all ingredients together. Take the greased muffin tin and fill each cup a little bit more than half way. At this point you can add a bit more cheese to the top. Place in the oven for 20- 25 minutes, check middle of a egg muffin with a knife to see if cooked through. Finally, let them cool and enjoy!
